Lemon Chicken Piccata Night π
Most of our weeknights are pretty packed right now, so when we actually get a free Tuesday evening? We're cooking. Not leftovers, not takeout. A real, proper, we're-doing-this dinner. And honestly? We kind of crushed it.
The menu (and the division of labor)
I took on the lemon chicken piccata. Cast iron skillet, lemon slices, capers, the whole deal. I've made this one enough times now that I'm fully confident saying my version is better than the Cheesecake Factory's. Tucker didn't argue, so I'm counting that as confirmation.
Tucker was on collard greens with bacon and a side of pasta. He put on his UMN apron, which always makes him look like he's hosting a cooking show. A very low-budget, very enthusiastic cooking show. He was so happy stirring those greens. There's something really satisfying about watching a giant mound of collards wilt down into something delicious, and Tucker was fully narrating the whole process like a nature documentary π
The best part
We cook together a lot, but it never gets old. There's something about splitting up the menu, bumping into each other in front of the stove, sneaking tastes of whatever the other person is making. It's one of those things that sounds so simple but it's actually one of our favorite ways to spend an evening together.
We talk about this a lot when we imagine what life with a kid will look like. A little one "helping" stir the greens. Tucker patiently letting them squeeze lemons. Flour handprints on the counter. We can't wait for those messy, wonderful nights.
And then the surprises kept coming
After dinner, Tucker surprised me with a brownie from our local bakery. Because apparently when your husband makes you a restaurant-quality piccata on a Tuesday, you bring home dessert π«
And then we got the best Snapchat from my sister and our niece Divinity, who just turned TEN. Double digits! We are so incredibly proud of her and so happy she got to celebrate such a huge birthday. Being uncles is one of our favorite things, and watching our nibblings grow up makes us even more excited about the family we're building π
